We invest a huge amount of time and energy in sourcing great speciality coffee and we make sure that the quality of the coffee beans is preserved when we roast. This means roasting every lot we source in a unique way that brings its very own intrinsic quality to the fore. This roasting work starts on a small scale, trying different roast profiles, identifying flavours we want to enhance and develop and checking the results. We keep experimenting, keep refining the roast, and keep cupping the coffee. Once a coffee is on our menu we cup every single production roast to make sure you get a consistent, flavour rich and tasty brew every time you buy.

The coffee beans go through a number of different heat reactions during the roasting process, all carefully monitored by one of our skillful employees. This results in a far tastier roast, made with finesse.

Water is an essential element for life. After all, without water we wouldn’t have coffee, would we?! When preparing coffee, water is very influential from a physical and chemical standpoint. Brewing the perfect pot of coffee is more than just pouring it in.

93 degrees Celsius is the ideal water temperature with which to brew any coffee. This is actually lower than the temperature water boils at, so precision is key. Our baristas have the skill level to always brew the perfect cup at the ideal temperature.
